Ingredients:
- 2 cups rolled oats
- 1 cup pitted dates (softened)
- ½ cup almond butter (or peanut butter)
- ¼ cup honey (or maple syrup for a vegan option)
- ½ tsp vanilla extract
- ¼ tsp salt
- Optional: ¼ cup chopped nuts, seeds, or chocolate chips
Instructions:
- Prepare the Dates:
Soak the pitted dates in warm water for 10 minutes if they’re dry. Drain and blend them into a paste using a food processor. - Combine Ingredients:
In a large bowl, mix the oats, date paste, almond butter, honey, vanilla extract, and salt. If using nuts, seeds, or chocolate chips, fold them in now. - Shape the Bars:
Line a square baking dish with parchment paper. Press the mixture firmly into the dish to create an even layer. - Chill:
Refrigerate for 2–3 hours or until the mixture firms up. - Cut and Serve:
Once chilled, remove from the dish and cut into bars or squares. Store in an airtight container in the refrigerator for up to 2 weeks.
