Oat and Date Energy Bars

Try these easy homemade oat and date energy bars! Packed with natural sweetness and healthy ingredients, they’re perfect for snacks, workouts, or meal prep. No baking required!

Ingredients:

  • 2 cups rolled oats
  • 1 cup pitted dates (softened)
  • ½ cup almond butter (or peanut butter)
  • ¼ cup honey (or maple syrup for a vegan option)
  • ½ tsp vanilla extract
  • ¼ tsp salt
  • Optional: ¼ cup chopped nuts, seeds, or chocolate chips

Instructions:

  1. Prepare the Dates:
    Soak the pitted dates in warm water for 10 minutes if they’re dry. Drain and blend them into a paste using a food processor.
  2. Combine Ingredients:
    In a large bowl, mix the oats, date paste, almond butter, honey, vanilla extract, and salt. If using nuts, seeds, or chocolate chips, fold them in now.
  3. Shape the Bars:
    Line a square baking dish with parchment paper. Press the mixture firmly into the dish to create an even layer.
  4. Chill:
    Refrigerate for 2–3 hours or until the mixture firms up.
  5. Cut and Serve:
    Once chilled, remove from the dish and cut into bars or squares. Store in an airtight container in the refrigerator for up to 2 weeks.
