Ingredients for Sicilian Caponata:
- 250 g cherry tomatoes
- 2 small eggplants
- 1 green bell pepper
- 1 onion
- 1 garlic clove
- 1 stalk celery
- 10 green olives
- 2 tbsp raisins
- 2 tbsp capers
- 2 tbsp almonds
- 1 sprig basil
- Olive oil
- 2 tbsp balsamic vinegar
- 1 tsp powdered sugar
- Salt and pepper to taste
Instructions:
- Prepare the Ingredients:
- Wash and dice the eggplants into small cubes.
- Slice the green pepper into thin strips.
- Finely chop the onion, celery, and garlic.
- Halve the cherry tomatoes.
- Cook the Eggplant:
