Instructions:
- Prepare the crepe batter:
- In a mixing bowl, whisk together the whole wheat flour, eggs, milk, melted butter, vanilla extract (if using), salt, and honey or maple syrup (optional) until smooth. Let the batter rest for about 10-15 minutes to help the flour hydrate and the crepes to be more tender.
- Cook the crepes:
- Heat a non-stick skillet or crepe pan over medium heat. Lightly grease the pan with a bit of butter or oil.
- Pour about 1/4 cup of batter into the pan, tilting the pan to spread the batter evenly into a thin layer. Cook for about 1-2 minutes, or until the edges start to lift and the crepe is golden underneath.
- Flip the crepe and cook for an additional 30 seconds to 1 minute until golden brown on the other side.
- Repeat with the remaining batter, greasing the pan as needed.
- Assemble the crepes:
- Once all the crepes are cooked, place one on a plate. Add a generous amount of fresh fruit on top and drizzle with honey or maple syrup for sweetness.
- If desired, sprinkle with powdered sugar for a little extra flair.
